This exposes the starchy endosperm, which is the main component of poha. The de-husked rice is then parboiled or soaked in hot water for a specific amount of time. This process gelatinizes the starch, making the rice softer and easier to flatten. The parboiled rice is then dried thoroughly and flattened into thin flakes using rollers or a special grinding stone. This process results in the characteristic texture of poha.
