Puttu is a breakfast dish eaten in the South Indian states of Kerala, Tamil Nadu and parts of Karnataka, as well as Sri Lanka. Puttu means “portioned” in Malayalam. It is made of steamed cylinders of ground flour layered with coconut shavings, sometimes with a sweet or savory filling on the inside. Usually the flour used for the preparation is made from white rice. But other options like multi grain, red rice, ragi or corn can also be found. Brahmin’s Ragi puttu powder uses Ragi flour as the base ingredient, instead of the traditional red or white rice flour. Ragi flour is made from ground finger millet, a gluten-free and highly nutritious grain rich in calcium, iron, and fiber.
