Traditional Yorkshire Bacon from Mount Grace Charcuterie Traditional Yorkshire dry-cured back bacon made for us by Mount Grace Charcuterie using free-range Yorkshire pork. This bacon is produced using a sea-salt based curing recipe originating from a Yorkshire butcher’s shop in the 1970s. The traditional cure includes approved curing salts (nitrate), before being naturally smoked. The result is a classic, full-flavoured British bacon with a firm texture and balanced smokiness.
