Assyrtiko, Athiri, and Aidani are strictly harvested from very old vineyards in Episkopi, at least two centuries old, specially selected for this style. The harvest takes place later than the usual date for dry wines, resulting in dramatically low yields. The grapes are spread out in the sun for about 14 days. This is followed by natural fermentation and about three years of aging in old concrete tanks, while additional aging lasts sixteen years in oak barrels.
