Description DescriptionTwo 8oz lamb rumps prepared from Staffordshire lamb and cut to restaurant specification. The outer rind is removed, leaving a neat layer of fat for flavour, and the steaks are square cut for a clean finish. Lamb rumps are an excellent choice when you want to serve something a little more refined. Tender, full of flavour, and ideal for cooking pink. Supplied as 2 rumps per pack, approximately 8oz each. Cooking Guide Remove from the fridge 20–30 minutes before cooking. Season well with salt and pepper. Sear fat-side down in a hot pan for 2–3 minutes to render slightly. Turn and cook for 3–4 minutes per side for medium rare (50–52°C). Alternatively sear, then finish in a 200°C (180°C fan) oven for 5–6 minutes. Rest for 5–10 minutes before slicing. Best served pink. Serving SuggestionSlice and serve with dauphinoise potatoes and greens, or pair with a red wine jus for a simple, impressive plate.
